I will explain the fundamental and most delicious way to enjoy matcha.

 

 

Tools used

When preparing matcha, these tools are used. However, having all of them is not absolutely necessary, as substitutes can be used.

 

1.Dip the chasen in hot water.

First, soak the chasen in hot water. Using a dry chasen may cause the tips to break. By allowing it to absorb water, the chasen becomes more flexible.

 

2.Sift 2 grams of matcha powder through a tea strainer and into the matcha bowl.


Next, sift 2 grams of matcha powder into a container using a tea strainer. If you don't use a tea strainer, clumps may remain, resulting in an unpleasant texture, so be sure to perform this step. A solution for when a tea strainer is unavailable will be uploaded in a separate article, so please check there.

 

3.Pour 60g to 80g of water at approximately 80°C

Pour 60g to 80g of water at approximately 80°C. Matcha’s flavor changes depending on the temperature. For more details on how temperature affects taste, please refer to a separate article. As for the amount of water, if you prefer a stronger matcha flavor, use 60g; for a lighter, more refreshing taste, 80g is recommended.

 

4.Quickly whisk with the chasen.

Once you've added the hot water, whisk it with the chasen as quickly as possible. The longer you wait, the more bitterness and astringency the matcha will develop. When whisking, move the chasen slowly from side to side while swiftly moving it back and forth.

 

5.Break the large bubbles with the chasen.

Finally, trace circles on the surface of the water to pop the larger bubbles. This will create a smooth foam and result in a better mouthfeel.
